Mamori Tai is a Japanese saying shared between lovers. It means "I will always protect you." It's a term of both deep gentleness and fierce protectiveness, captured here between the yielding sake and angular gin.
Ingredients
- 2½ oz North American Sake Brewery "Big Baby" Nigori sake
- ¾ oz Roku gin
- ½ oz butterfly pea syrup (recipe below)
- ⅛ oz Mt. Defiance Absinthe Superiéure
- Spearmint sprig
Preparation
- Combine the gin, sake, and syrup in a shaker over ice and stir to combine.
- Strain into Nick & Nora glass and garnish with the spearmint sprig.
Butterfly pea syrup: in a medium saucepan, combine ¼ cup dried butterfly pea flowers with 2 cups water. Bring to a boil, reduce from heat, and steep for 5 minutes. Strain and return the liquid to the pot. Add 2 cups sugar and stir over medium heat until fully dissolved. Store chilled.
