Mamori Tai

Mamori Tai is a Japanese saying shared between lovers. It means "I will always protect you."  It's a term of both deep gentleness and fierce protectiveness, captured here between the yielding sake and angular gin.

Preparation

  1. Combine the gin, sake, and syrup in a shaker over ice and stir to combine. 
  2. Strain into Nick & Nora glass and garnish with the spearmint sprig. 

Butterfly pea syrup: in a medium saucepan, combine ¼ cup dried butterfly pea flowers with 2 cups water.  Bring to a boil, reduce from heat, and steep for 5 minutes.  Strain and return the liquid to the pot. Add 2 cups sugar and stir over medium heat until fully dissolved.  Store chilled.
