Deeper Dive

The artichoke aperitivo is a longtime tradition in Italy, where artichokes grow in abundance. Artichokes and their brethren aren't native to our mountains. Despite this, they grow here effortlessly.

Our Thistle aperitif combines artichoke, cardoon, and blessed thistle from our farm with other regional botanicals. It’s a portrait of Appalachian agriculture, both in the moment and in years to come.

Thistle is an elegant addition to a Brooklyn or Sour. It pairs well with citrus and bubbles, but also stands up on its own as a gentle nightcap.
