Apple Raita

Raita is a cooling, yogurt-based condiment from India.  Traditionally, it's made with grated cucumber, but our version is made with grated apples. 
  

Ingredients

  • 1½ cup plain whole milk Greek yogurt (or strained whole milk yogurt)
  • 1 small tart apple, peeled and coarsely grated
  • 1 tsp grated ginger
  • 1 jalapeño chile, seeds removed, finely chopped (if chiles are out of season, try a tsp of chile oil.  It's not traditional, but brings a little heat in a pinch)
  • ¼ tsp salt, or to taste
  • 1 tbsp untoasted sesame oil
  • 1-2 tbsp sugar
  • 4 scallions, trimmed and chopped
  • ½ tsp black mustard seeds
  • ½ tsp cumin seeds
  • 1 garlic clove, minced

Preparation

  1. In a small mixing bowl, stir together yogurt, apple, ginger, chile, sugar, scallions, and salt.
  2. Warm the oil in a small skillet over medium heat. When oil is hot, add the mustard seeds and cumin seeds. Let seeds sizzle for a moment, then stir in garlic and cook until just softened.  Do not allow to brown.
  3. Carefully pour the contents of skillet into yogurt and stir together.  Adjust the salt and sugar, to taste.  Serve at cool room temperature.
