Evolved out of an experimental Tallegio style cheese, Providence is an aged, firm goat milk cheese with a natural rind. It can be used as one would a Parmigiano Reggiano, Pecorino or Manchego. Pleasantly salty and "goaty".

Goat Lady Dairy opened its doors in 1995 as a small, collaborative family project. The goal was to change people's relationship with food to something sustainable and ethical. In short, something real. Over the years, they've slowly grown, but their dedication to sustainability hasn't waivered. They've partnered with the Piedmont Land Conservancy to ensure that their land is always held in agricultural use, and regularly partner with local restaurants and neighboring dairy farmers to host food-focused events with an emphasis on education.
