Olli Salami Napoli
Prepared in the style of the cured salami of Naples, Napoli Salami is smoked over applewood, giving it a complex, hearty flavor.
Olli is a fourth-generation family business originating in Norcia, Italy. After finding incredible success with their products in Rome, Oliviero (Olli) came to Virginia to start his own Salumeria in the tradition of his predecessors. Like his grandfather, Olli uses only humanely raised pork for his products. They receive no antibiotics and are given a healthy, diverse vegetarian diet for the entirety of their lives. The final product is then carefully and lovingly aged, following the same recipes his grandfather used in 1850.
