This classic Tuscan style of salami is characterized by the inclusion of fennel, which grows wild in the Tuscan hills.  It's an ancient recipe, dating back well into the Middle-Ages, and has changed little over time.  The meat is first fermented and then aged for five months, during which its flavors concentrate and it looses moisture, yielding a long shelf-life and incredible complexity.

The Whole Ox is a small, sustainable butchery located in Marshall, Virginia.  Run by husband and wife team Derek and Amanda Luhowiak, they are a bastion of sustainable gourmet food and wine in what is otherwise nearly a rural food desert.  Derek leads the recipe development and production of their sausages and cured meats, while Amanda handles the daily operation of the shop.  Artemisia's own Andrew spent many years at TWOX acting as general manager and sommelier.  It was there that he gained his vast knowledge of wine, as well as his deep love for local food.  We are proud to support this incredible business in their tireless efforts to keep their community inspired, well-fed, and environmentally sound.
