Handmade ricotta is a rare delicacy outside of Italy. Made by gently separating fresh curds from the whey and then mixing them with salt and a small amount of milk or cream, ricotta is the unsung emblem of versitility. It's lovely eaten fresh with a salad or atop pasta, but can also be whipped into frittatas, pancakes, and tortes. We were thrilled to find a local ricotta, and are even happier to share it with you.
Mountain View Farm Products
Mountain View Farm Products is family owned and operated by Fred and Christie Huger. The family lives on the farm in Fairfield, Virginia with their three children: Anderson, Everette, and Isabelle. Their beautiful 250 acre dairy farm currently houses around 200 cows (Jersey, Holstein, and cross-bred) which they milk twice daily. Their cows subsist primarily on diverse native pasture and receive non-GMO feed when winter weather makes natural forage scarce.
