Herbal Melon Bellini

As much as we love melons, their generous size often leaves us overwhelmed.  When melon season is too much, make this cocktail.  The cantaloupe syrup keeps well in the fridge, and can be used in all manner of drinks and dishes.


  • 4 ounces chilled Terre di Marca Prosecco
  • 1/2 ounce cantaloupe simple syrup (recipe below)
  • 1/2 ounce gin
  • 1/2 ounce lime juice 
  • Sprig of mint, for garnish


    1. Fill a Collin’s glass with ice.  Add the cantaloupe syrup and gin.  Stir to combine.  Top with the Prosecco and gently stir a second time.  Garnish with the mint.
    For the cantaloupe syrup: combine 1 cup cubed cantaloupe, 1 cup of sugar, and 1 cup water in a saucepan.  Bring to a boil, stirring occasionally.  Once boiling, reduce the heat and simmer for 2-3 minutes.  Remove from the heat and allow to steep for another 10 minutes or so.  Strain out the solids and discard.  Store the syrup in the refrigerator for up to a week.
