Makrut Spritz

Makrut lime, otherwise known as Kaffir lime, is an intensely aromatic citrus fruit native to Southeast Asia.  Mommenpop's Makrut Limepop concentrates its essence, doubling as the backdrop for this low-ABV spritz. 

Ingredients

Preparation

  1. Combine the limepop, plum syrup, Cocchi rosa, and the verjus in a shaker over ice.  Shake until chilled.  
  2. Tuck the Shiso leaves and ice into a collins glass, layering by the leaves up the sides of the glass.  Strain over the ice.  Top with the soda water.

For the red plum syrup: combine 1 cup sugar, 1 cup water, and 8 oz pitted, sliced plums in a sauce pot.  Bring to a boil, then reduce the heat to medium-low and cook for 5 minutes.  Remove from the heat and allow to stand for another 5 minutes.  Carefully strain the plums from the syrup and discard.  Store the syrup in the refrigerator until ready to use. 

Note: be sure to use very tart plums for this syrup (damsons and black amber plums work well).  If your plums are on the sweeter side, add a touch of lemon juice to brighten them up.
