Makrut lime, otherwise known as Kaffir lime, is an intensely aromatic citrus fruit native to Southeast Asia. Mommenpop's Makrut Limepop concentrates its essence, doubling as the backdrop for this low-ABV spritz.
Ingredients
- 2 oz Mommenpop Makrut Limepop
- ¾ oz tart plum syrup (recipe below)
- ½ oz Cocchi Rosa Americano
- ½ oz Noble Verjus of Pinot Noir
- Soda water
- Shiso leaves, for garnish
Preparation
- Combine the limepop, plum syrup, Cocchi rosa, and the verjus in a shaker over ice. Shake until chilled.
- Tuck the Shiso leaves and ice into a collins glass, layering by the leaves up the sides of the glass. Strain over the ice. Top with the soda water.
For the red plum syrup: combine 1 cup sugar, 1 cup water, and 8 oz pitted, sliced plums in a sauce pot. Bring to a boil, then reduce the heat to medium-low and cook for 5 minutes. Remove from the heat and allow to stand for another 5 minutes. Carefully strain the plums from the syrup and discard. Store the syrup in the refrigerator until ready to use.
Note: be sure to use very tart plums for this syrup (damsons and black amber plums work well). If your plums are on the sweeter side, add a touch of lemon juice to brighten them up.
