French 75, for a Crowd

Lemony and bright, the French 75 is a timeless classic that comes together quickly and never fails to delight.  We've scaled our recipe for a 750mL bottle of sparkling wine.  

Ingredients

  •  cups gin
  • 1 cup plus 3 tbsp fresh lemon juice 
  • 1 cup plus 3 tbsp simple syrup
  • 1 750 mL bottle sparkling wine
  • 8 dashes Artemisia Elderflower Juniper Bitter
  • Lemon peels, for garnishing

    Preparation

    1. In a large pitcher or bowl, combine the gin, lemon juice, bitters, and simple syrup.  Stir well to combine.  You can make this up to 1 week in advance, storing tightly covered in the refrigerator.  Do not use plastic wrap as the seal for this, as it won't provide a secure seal.  
    2. To serve, one has two options:  Combine the gin mixture with an entire bottle of sparkling wine and portion immediately into pitchers or glasses, or to make individual cocktails as needed. If the latter, pour 3 oz of the gin mixture into a flute and stop off with 2 oz of sparkling wine. 
    3. Rub a lemon rind around the edge of each glass, as needed, and garnish each with a lemon peel.
