Deeper Dive

The pawpaw is endemic to Appalachia, yet it remains underrepresented in our modern foodways. Understory draws it into the limelight. We fermented the raw pulp via méthode traditionnelle, first in tank and then again in bottle. Post-disgorgement, we added a dosage of local Virginian honey. A wild wine, from tree to table.
