Stuffing Meatballs

If you love Thanksgiving stuffing but don't feel like eating stuffing sandwiches for days on end, this recipe is the solution.  Leftover stuffing stands in for breadcrumbs in this simple meatball recipe.  A little marinara sauce adds bright acidity, a welcome change of palate after the Thanksgiving feast.  

Ingredients

  • 1 large egg
  • 1 clove garlic, minced or grated
  • Salt and pepper, as needed
  • ¼ cup parsley, chopped 
  • 1 cup leftover cooked stuffing, roughly chopped
  • 1 lb ground beef
  • 1 cup marinara sauce, warmed in a wide, deep skillet
  • Grated Parmesan, for serving

Preparation

  1. Pre-heat the broiler.  Line a large rimmed baking sheet with nonstick foil.
  2. In large bowl, whisk together the egg, garlic, 2 tbsp water, and ¼  tsp each salt and pepper.  Stir in the parsley and leftover stuffing, mixing well.  Add the ground beef and mix until totally integrated, using your hands if needed.
  3. Form the meat mixture into 1½ -inch balls and place on the prepared baking sheet.  Broil until cooked through, 6-8 minutes.
  4. Transfer the meatballs to the skillet with marinara and toss to combine.  sprinkle with Parmesan and serve hot.
