Mentha brings both mentholic intensity and rhubarb acidity to the mojito. A hint of bitterness deepens an otherwise straightforward cocktail.
Ingredients

2 oz Artemisia Farm & Vineyard Mentha

1 oz light rum

1 lime quartered

2 sprigs mint

Soda water
Preparation

In a Collins glass, add the mint sprigs. Muddle the mint by pressing it lightly with a muddler to release the oils.

Drop in lime pieces and muddle to release juice.

Add Mentha and rum, stir and add ice.

Top with soda water.

Garnish with a mint sprig and a lime wheel.
