
Salted Oolong Spritz
Kelly AllenPentire's Coastal Spritz makes an effortless zero-proof cocktail topped with sparkling water, but it does just as well in a classic prosecco spritz. A little salinity and concentrated oolong tea tie everything together.
Ingredients
- 1½ oz Pentire "Coastal Spritz" Non-Alcoholic Aperitif, chilled
- ½ oz oolong simple syrup (recipe below), chilled
- 2 dashes Artemisia Salt and Sorghum Bitters
- 3 oz prosecco, well-chilled (see below for non-alcoholic variation)
- 2 large spearmint sprigs, plus a shorter sprig for garnishing
Preparation
- Combine the Pentire Coastal Spritz, oolong syrup, and bitters in a shaker. Add the mint sprigs and muddle well.
- Strain into a coupe glass and top with the prosecco. Garnish with a mint sprig.
To make this non-alcoholic, swap the prosecco for sparkling water, decreasing the volume slightly, and increase the oolong syrup, bitters, and Pentire, to taste.
For the oolong simple syrup: combine 4 tbsp oolong loose leaf tea (we use decaffeinated) with 8 oz water in a saucepan. Bring to a boil, then remove from the heat and allow to steep for 30 minutes. Strain and return the liquid to the saucepan. Add 1 cup of granulated cane sugar, return to a boil, then lower to a simmer. Cook, stirring, until the sugar dissolves. Remove from the heat, allow to cool, then transfer into a storage container. Store in the refrigerator for up to one week.
