The original Mai Tai comes not from Hawaii, but from California.  Victor J. Bergeron (Trader Vic) invented it in 1944 for his friends visiting from Tahiti.  Upon trying it, it's said that they shouted Maita'i roa ae!, meaning "out of this world, the best!"  

Ingredients

  • 1½ oz white rum
  • ¾ oz dry curaçao
  • ¾ oz lime juice
  • ½ oz orgeat
  • ½ oz dark rum
  • Garnish: lime wheel, mint sprig, or whatever feels right (we used a lemon fan and house-pickled cherries)

Preparation

  1. Combine the white rum, dry curaçao, lime juice, and orgeat into a shaker over ice.  Shake until very cold, then strain into a rocks glass.  Alternatively, you can use crushed ice in your shaker rather than cubed, give the cocktail a quick shake, and pour the entire contents of the shaker (ice and all) into a double rocks glass, unstrained.   

  2. Float the dark rum over the top of the cocktail.  Garnish as you like.
