Infused with cardoon, artichoke, and blessed thistle, grown at the margins of our farm, Thistle is a gentle, modern aperitivo.

Deeper Dive

Thistle is our take on an Italian classic. A tradition in Italy for generations, the artichoke aperitivo is a surprisingly good fit for the mid-Atlantic growing region. Thistle combines botanicals from our farm with local Appalachian herbs. The result is a wholly unique rendition of an otherwise time- honored practice.

Rye, Japanese Whiskey, Bourbon.
An elegant addition to a Brooklyn or Sour. Offers a soft counterpoint to citrus-oriented drinks, but also plays as a gentle addition to a weighty nightcap.

    4 months with 50% pecan wood and 50% American oak
