Lion's Tooth

Batch 2022

Made from heirloom apples, rhubarb, and dandelion blossoms. Traditional method, with a muscadine dosage, this is a field wine in its truest sense.

Deeper Dive

There's a long tradition of dandelion winemaking in rural Appalachia. This is our variation on the theme. Blending apples and rhubarb in with the dandelion blossoms, we celebrate old mountain agriculture. By making it a sparkling wine, we introduce playful verve to the traditional form.

    36% Dandelion blossoms from our farm, 36% Rhubarb from our farm, 28% Gold Rush apples from Front Mountain Fruit Farm (Belleville, PA)

  • Key Botanicals

    dandelion blossoms, rhubarb stalk, muscadine grapes

  • Aging

    2 months secondary fermentation in bottle, then 3 months in bottle after dosage
