Spinach-Matcha Smoothie Bowl

Eating enough veggies can feel like a chore.  Not so in this super-easy blender take.  A little matcha adds a nice boost of caffeine, as well.  

Ingredients

  • ¼ cup milk of your choice (coconut and oat milk both work well)
  • 1 banana, peeled, sliced, and frozen
  • 1 tsp matcha powder
  • 1 cup baby spinach, packed
  • 1-2 tbsp maple syrup
  • 1 tbsp chia seeds
  • 3 ice cubes
  • Sliced fruit, berries and/or nuts, to serve

Preparation

  1. Combine the milk, banana, matcha, spinach, dates, chia seeds, and the ice cubes in a blender.  
  2. Blend until totally smooth, stopping to scrape down the sides of the blender from time to time. 
  3. Transfer to a serving vessel and chill for 2-4 hours, or overnight.  The pudding should thicken up during this time.
  4. Garnish with the fruit and nuts.  Enjoy immediately.
