Eating enough veggies can feel like a chore. Not so in this super-easy blender take. A little matcha adds a nice boost of caffeine, as well.
Ingredients
- ¼ cup milk of your choice (coconut and oat milk both work well)
- 1 banana, peeled, sliced, and frozen
- 1 tsp matcha powder
- 1 cup baby spinach, packed
- 1-2 tbsp maple syrup
- 1 tbsp chia seeds
- 3 ice cubes
- Sliced fruit, berries and/or nuts, to serve
Preparation
- Combine the milk, banana, matcha, spinach, dates, chia seeds, and the ice cubes in a blender.
- Blend until totally smooth, stopping to scrape down the sides of the blender from time to time.
- Transfer to a serving vessel and chill for 2-4 hours, or overnight. The pudding should thicken up during this time.
- Garnish with the fruit and nuts. Enjoy immediately.
