Make this as an appetizer for your next dinner party, or serve alongside roasted chicken or pasta as a spread for warm bread. Keeps well in the refrigerator, making this an excellent option for cooking ahead.
Ingredients
- 3-4 heads garlic
- Olive oil, as needed
- Salt, as needed
Preparation
- Pre-heat the oven to 425° F.
- Cut about ½-inch off the top of the garlic heads, deep enough to open each clove.
- Place each head, cut-side up, on a sheet of aluminum foil that’s large enough to wrap around all of your garlic. Drizzle the garlic head with olive oil and season generously with salt. Fold the foil around the garlic heads. Try to avoid letting the foil touch the tops of the garlic, as it can stick.
- Set the garlic packet on a baking sheet and transfer to the oven. Roast until the garlic is tender and caramelized, 1-1½ hours.
- Remove from the oven and open the foil. Allow the garlic to cool slightly before serving.
