Persian Cucumber and Tomato Salad

This simple salad is one of the easiest recipes you'll make all summer.  It comes together in minutes and takes minimal prep work.  Serve as is with some salted cheese and bread for a light lunch, or as a bright counterpoint to a grilled summer dinner. 

Ingredients

  • ¾ lb cucumbers, skin sliced in alternating strips, diced 
  • ½ red onion, diced into ¼-inch pieces
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1 lb red tomatoes, cored and diced
  • ¼ cup lime juice, plus more to taste
  • 3 tbsp extra-virgin olive oil
  • ¾ tsp salt, plus more to taste
  • ¼ tsp black pepper, plus more to taste

Preparation

  1. Combine the cucumber, onion, parsley, mint, and tomatoes in a large bowl.  
  2. In a separate, small bowl, combine the lime juice, olive oil, salt, and pepper.
  3. Transfer the olive oil mixture to the bowl with the cucumbers and toss to combine.  Serve at room temperature or slightly chilled.
