This salad takes inspiration from the Mexican tradition of seasoning fruit with chiles and lime juice. Crumbled cojita cheese tempers the heat.
Ingredients
- 1 small watermelon, cut into 1-inch cubes
- Zest and juice of two limes
- ½ tsp salt
- 1 tsp chile powder
- ¼ cup cotija cheese, crumbled
- Chopped cilantro, to serve
Preparation
- Combine the watermelon, lime juice, half the lime zest, and chili powder in a large bowl. Toss to coat. Cover and refrigerate for at least 1 hour.
- To serve, crumble the cotija cheese, cilantro, and the remaining lime zest over the salad. Serve chilled.
