Melon Salad with Cherry Tomatoes and Cucumber

If you think melon cubes are just for fruit salad, we're here to prove you wrong.  In this case, they're a natural counterpoint to the crunchy texture of cucumbers and the just-sweet flavor of summer tomatoes.  Add a little Tofu "Feta" for something more substantial. 

Ingredients

  • 1 small melon (or half or 1 large), rind and seeds removed, cut into 1-inch pieces
  • 1 lb tomatoes, halved
  • 1 large cucumber, peeled, seeded, and quartered or halved into 1-inch pieces
  • Salt and pepper, to taste
  • ½ tbsp sugar
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp lime juice
  • ½ cup basil leaves
  • ½ cup mint leaves

Preparation

  1. Combine the melon, tomatoes, and cucumber in a mixing bowl.
  2. Season with a generous amount of salt and pepper, followed by the olive oil, sugar, and lime juice.  Toss until evenly-coated.
  3. Transfer the melon mixture to the refrigerator and allow to marinate up to 30 minutes.
  4. Just before serving, fold in the basil and mint leaves.  If your leaves are especially large, tear them into smaller segments first. 
  5. Adjust the lime juice and olive oil, to taste.  Serve cool or chilled.
