If you think melon cubes are just for fruit salad, we're here to prove you wrong. In this case, they're a natural counterpoint to the crunchy texture of cucumbers and the just-sweet flavor of summer tomatoes. Add a little Tofu "Feta" for something more substantial.
Ingredients
- 1 small melon (or half or 1 large), rind and seeds removed, cut into 1-inch pieces
- 1 lb tomatoes, halved
- 1 large cucumber, peeled, seeded, and quartered or halved into 1-inch pieces
- Salt and pepper, to taste
- ½ tbsp sugar
- 1 tbsp extra-virgin olive oil
- 2 tbsp lime juice
- ½ cup basil leaves
- ½ cup mint leaves
Preparation
- Combine the melon, tomatoes, and cucumber in a mixing bowl.
- Season with a generous amount of salt and pepper, followed by the olive oil, sugar, and lime juice. Toss until evenly-coated.
- Transfer the melon mixture to the refrigerator and allow to marinate up to 30 minutes.
- Just before serving, fold in the basil and mint leaves. If your leaves are especially large, tear them into smaller segments first.
- Adjust the lime juice and olive oil, to taste. Serve cool or chilled.
