Homemade hummus takes just minutes to prepare. Better than store-bought and more cheaper to boot, you'll never need to buy hummus again.
Ingredients
Preparation
-
In a blender, combine the lemon juice, garlic, and ¼ tsp of salt. Let the mixture sit 10 minutes to draw out the garlic flavor.
- To the blender, add the tahini, remaining 1½ tsp salt and, the cumin. Blend until a thick paste forms. Add ⅓ - ⅔ cup of olive oil to the blender while the motor is running, blending until the mixture becomes smooth.
- Add the chickpeas to blender with tahini mixture. Blend until perfectly smooth and not at all grainy, stopping to scrape down sides of bowl occasionally. This may take upward of a few minutes. Add a little water if the hummus becomes too thick. Adjust the salt, lemon juice, and cumin as needed.
- To serve, spread the hummus in a shallow bowl. Dust with paprika, drizzle with olive oil, and sprinkle with parsley to finish.
