Classic Hummus

Classic Hummus

Homemade hummus takes just minutes to prepare.  Better than store-bought and more cheaper to boot, you'll never need to buy hummus again. 

 

Ingredients

  • 1 cups cooked chickpeas, drained 
  • 4 tbsp lemon juice
  • 2 cloves garlic, finely chopped
  • 1 tsp salt, plus more to taste
  • ½ cup tahini
  • ½ cup extra-virgin olive oil
  • 6 tbsp water, or as needed
  • 1 tsp ground cumin, plus more to taste
  • Paprika, for serving
  • Chopped fresh parsley, for serving

Preparation

  1. In a blender, combine the lemon juice, garlic, and ¼ tsp of salt. Let the mixture sit 10 minutes to draw out the garlic flavor.

  2. To the blender, add the tahini, remaining 1½ tsp salt and, the cumin.  Blend until a thick paste forms. Add ⅓ - ⅔ cup of olive oil to the blender while the motor is running, blending until the mixture becomes smooth. 
  3. Add the chickpeas to blender with tahini mixture. Blend until perfectly smooth and not at all grainy, stopping to scrape down sides of bowl occasionally. This may take upward of a few minutes.  Add a little water if the hummus becomes too thick.  Adjust the salt, lemon juice, and cumin as needed.
  4. To serve, spread the hummus in a shallow bowl. Dust with paprika, drizzle with olive oil, and sprinkle with parsley to finish.
