Gobhi Ki Sabzi

Gobhi Ki Sabzi

Gobhi Ki Sabzi is a simple Indian recipe for stir-fried cabbage.  It's the ultimate base for experimentation.  Toss in a few peas, cubed potatoes, tomatoes, or lentils.  This is a dish to have fun with. 

Ingredients

  • 6 cups green cabbage (about 1 medium head)
  • 2 tbsp red lentils
  • 2 tbsp sesame oil
  • 1 tsp ground cumin
  • ½ tsp ground turmeric
  • ½ tsp red chili powder 
  • 1 tsp salt
  • 6 tbsp water
  • ¼ cup cilantro 

Preparation

  1. Soak the lentils in ¼ cup of hot water while you prepare the cabbage.
  2. Slice the cabbage in half and remove the core.  Cut into quarters and slice each quarter into thin strips. 
  3. In a large pan or deep-sided pot, heat the sesame oil. Add cumin, turmeric, red chili, cabbage, salt, water, and soaked lentils. Mix well and cook, covered, for 5-8 minutes. 
  4. The cabbage should be relatively soft, but not mushy.  If the cabbage is still a bit firm, cook it for a little longer. 
  5. Stir the cabbage to redisperse the seasonings and adjust the salt and spices to taste.  Add a little sesame oil if the cabbage is dry.  Stir in the cilantro just before serving.
