Gobhi Ki Sabzi is a simple Indian recipe for stir-fried cabbage. It's the ultimate base for experimentation. Toss in a few peas, cubed potatoes, tomatoes, or lentils. This is a dish to have fun with.
Ingredients
- 6 cups green cabbage (about 1 medium head)
- 2 tbsp red lentils
- 2 tbsp sesame oil
- 1 tsp ground cumin
- ½ tsp ground turmeric
- ½ tsp red chili powder
- 1 tsp salt
- 6 tbsp water
- ¼ cup cilantro
Preparation
- Soak the lentils in ¼ cup of hot water while you prepare the cabbage.
- Slice the cabbage in half and remove the core. Cut into quarters and slice each quarter into thin strips.
- In a large pan or deep-sided pot, heat the sesame oil. Add cumin, turmeric, red chili, cabbage, salt, water, and soaked lentils. Mix well and cook, covered, for 5-8 minutes.
- The cabbage should be relatively soft, but not mushy. If the cabbage is still a bit firm, cook it for a little longer.
- Stir the cabbage to redisperse the seasonings and adjust the salt and spices to taste. Add a little sesame oil if the cabbage is dry. Stir in the cilantro just before serving.
