Classic Zucchini Bread

Classic Zucchini Bread

Just good old fashioned zucchini bread.  Nothing avant garde.  Nothing weird.  Until you use it to make Zucchini Bread Frozen Yogurt Sandwiches, that is. 

Makes 1 large or 2 small loaves.

Ingredients

  • 2 cups all-purpose flour
  • 1½ cups sugar
  • 2 tsp baking soda
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 3 large eggs
  • 2 cups grated zucchini 
  • ¾ cup olive oil or vegetable oil
  • 1 tbsp vanilla
  • 1½ cups chopped walnuts or pecans (optional)
  • Butter, as needed, for greasing the pans

Preparation

  1. Preheat the oven to 350˚F. Grease two 8×4-inch loaf pans or one large square pan with butter. 
  2. In a medium bowl, combine flour, sugar, baking soda, cinnamon, and salt with a whisk. Set aside.
  3. Beat the eggs together in a large bowl. Add the grated zucchini, oil, and vanilla. Mix well to combine.
  4. Add the dry ingredients and the chopped nuts (if using) to the zucchini mixture. Gently stir just until combined.  Be careful not to overmix. 
  5. Divide the batter evenly over the prepared pans and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Remove from the oven and cool in the pans for 5 minutes.  Carefully remove the loaves from their pans and transfer to a wire rack.  Allow to cool completely.
