Just good old fashioned zucchini bread. Nothing avant garde. Nothing weird. Until you use it to make Zucchini Bread Frozen Yogurt Sandwiches, that is.
Makes 1 large or 2 small loaves.

- Preheat the oven to 350˚F. Grease two 8×4-inch loaf pans or one large square pan with butter.
- In a medium bowl, combine flour, sugar, baking soda, cinnamon, and salt with a whisk. Set aside.
- Beat the eggs together in a large bowl. Add the grated zucchini, oil, and vanilla. Mix well to combine.
- Add the dry ingredients and the chopped nuts (if using) to the zucchini mixture. Gently stir just until combined. Be careful not to overmix.
- Divide the batter evenly over the prepared pans and bake for 50-60 minutes or until a toothpick comes out clean.
- Remove from the oven and cool in the pans for 5 minutes. Carefully remove the loaves from their pans and transfer to a wire rack. Allow to cool completely.
