It's a crime to mess with good cherry tomatoes. This recipe is more of a "gilded lily" approach. Simply sliced and dressed with a little olive oil, herbs, and fresh goat cheese, the tomatoes are the star.
Ingredients
- 1 pint cherry tomatoes, sliced in half
- 1 tsp za’atar
- 2 tbsp extra-virgin olive oil
- 4 red scallions or spring onions, thinly sliced
- 3 tbsp fresh basil leaves, julienned
- 3 tbsp fresh mint leaves, julienned
- 1 tsp lemon juice
- Coarse sea salt, for finishing
- 2 oz fresh chèvre, gently crumbled into large pieces
Preparation
- Combine the tomatoes, scallions, basil, mint, lemon juice, 1 tbsp of olive oil, and 1 tsp of salt in a large bowl. Toss to combine.
- In a separate, small bowl, combine the remaining tbsp of olive oil with the za'atar.
- Toss the cherry tomato mixture a second time, then transfer it to a shallow serving dish. Gently nestle the chèvre into the cherry tomatoes. Drizzle the za'atar mixture overtop of everything. Serve at once.
