A lighter alternative to homemade ice cream. Honey and bourbon keep it from freezing quite so firmly. Thaw for 30-45 minutes before serving.
Ingredients
- 32 oz plain, full fat Greek yogurt
- ½ cup honey
- 2 tsp vanilla extract
- 3 tbsp bourbon
- Dash of salt
Preparation
- Combine the Greek yogurt, honey, vanilla extract, salt, and bourbon in a large bowl. Mix together until thoroughly combined.
- Transfer the mixture to a loaf pan or similar sized pan. Spread the yogurt into a smooth layer. Cover the pan with plastic wrap and transfer it to the freezer.
- Stir the yogurt with a spoon every 30 minutes for 2 hours. It should slowly begin to thicken.
- After 2 hours or so, the frozen yogurt should be at soft-serve consistency. Feel free to enjoy as is, or allow to solidify further for a denser texture.
Note: Once fully frozen, this recipe becomes quite firm. Allow to thaw for 20-30 minutes before serving for optimum texture.
