New Spanish

 An old-meets-new homage to Spain.  Olives and sherry for a little brine, Solstice Vermouth for dusty bitterness, and Salt & Sorghum bitters for a dash of straight salinity. 

Ingredients

Preparation

  1. Combine the manzanilla, Solstice, and bitters in a shaker over ice.
  2. Strain into a glass and top off with the tonic water.  Garnish with the orange wedge and a spear of olives.
