Colby cheese is a semi-hard American cheese prepared from cow’s milk. While the cheese looks similar to cheddar due to the color, Colby cheese is softer, has a more open texture and higher moisture content. This is a mild, creamy cheese that works well in dishes calling for melted cheese, as well as simply sliced and served alongside crackers.
