Solstice Vermouth

Batch 2024

Mountain fruit and meadow herbs.
Red plums, rose hips, and sumac add verve.
Wormwood and dandelion leaf keep it bittersweet.

Deeper Dive

This is a red vermouth in the strictest sense, but its soul is purely Appalachian. Powerfully textured and tannic, with assertive astringency and heady aromatics, it's an entirely different botanical expression than what you might find in a classic European vermouth. Full skin-contact and partial stem inclusion yield angular structure, while a blend of heirloom local plum varieties brings concentrated acidity.

Plays Well with...

Floral gins, rye whiskey, or just a large ice cube.

A great stand-in for Campari or other red aperitivi. Consider a Negroni or Boulevardier, or use as a sweet vermouth for a more angular, fruity riff.
