Tim Smith Wines was established concurrent to a 20+ year winemaking career working for some of the best Barossa Valley based wine producers, as well as numerous overseas vintages in France, Portugal, and New Zealand. Heavily influenced by the stylistics of the Rhone Valley, Smith finds common ground with the robust nature of Barossa wines, blending acidity and poise with ripeness and power.
Smith's Viognier is sourced from two vineyards in the Eden Valley. The grapes are whole-cluster pressed into a combination of new and used French oak barrels, where they undergo spontaneous fermentation with native yeast. Unlike many examples of Viognier on the market, Smith's sees no Malolactic fermentation and only limited time aging on the lees. It takes a step away from the opulent, weighty style of Viognier dominating the American market, leaning back towards elegance, refinement, and expressivity.
