Tim Smith's 2024 Rosé is a pale salmon color in the glass, with aromas of wild strawberry, white cherry, rose petal, citrus zest, with a whisper of dried herbs and river rock minerality.
The palate shows red berries, orange rind, pink peach, pink grapefruit, and light watermelon, supported by savory nuances of thyme and a delicate nutty-biscuit-pastry character. A portion fermented in barrel with wild yeast adds subtle layers of texture and complexity.
Pair with grilled shrimp, seared tuna with olives, prosciutto-wrapped melon, goat cheese tart, charred veggie skewers, or Vietnamese summer rolls.
