Thistle is a gently bitter infusion of cardoon, artichoke, and blessed thistle. Roasted hazelnuts and peanuts speak of the harvest, while chamomile softens the edges.


About Thistle

We craft our Thistle from cardoon and artichoke grown at the margins of our property. Infused with hazelnuts, lemon balm, chamomile, tarragon, and raspberry leaf, Thistle is a lean reiteration of a classic artichoke vino amaro. A gently bitter digestif.


In the Glass

Pair with whiskeys of all types: ryes and Japanese whisky.
