Mt. Defiance Sweet Vermouth
Mt. Defiance is a truly farm-to-bottle operation. Their vermouth is fortified with their own, house made apple brandy. They grow their botanicals on site just outside their cider barn, augmenting their selection with spices from around the world. Winemaker and distiller Peter Ahlf begins by barrel aging his brandy, then blending it with locally grown Vidal Blanc wine, local honey, and a house-made caramel syrup (in the tradition of Italian vermouth). The resulting wine is slight, bitter, and nuanced.
Mt. Defiance Cidery and Distillery
Mt. Defiance is based out of Middleburg, VA, and focuses their attention on small batch artisanal cider and spirits. Peter Ahlf, the mind behind their vermouth, worked on the U.S. space program for 22 years, including sixteen years of service at NASA headquarters. He switched gears to custom woodworking before joining Mt. Defiance as the lead distiller in 2015. His work has won countless medals both nationally and internationally.
