Rosemary

Rosemary is one of the few herbs that can successfully overwinter in the Mid-Atlantic region.  A welcome herb in a season otherwise left sparse of spice and flavorings, rosemary is a natural addition to spring lamb or roasts of any kind.  It also goes beautifully with roasted potatoes for a hearty vegetarian option.
