Piližota takes its name from Ivica Piližota, an intrepid pioneer in the cultivation of native Croatian grape varietals. Ivica dedicates his work to capturing the unsung terroir of central Dalmatia. Here, the soil is a layered affair of loamy clay and limestone bedrock, leading to vigorous vine production. Babić like Ivica's more often than not comes from less fertile sites, where the vine's natural vigor is held in check, allowing it to concentrate its efforts in just a few clusters.
At around 300 meters above sea level, the Piližota vineyards see some of the warmer temperatures in Central Dalmatia. Nights can be surprisingly cool, and the entire region is swept constantly by the coastal sea breeze. The airflow from the ocean keep mildew and disease at bay, allowing Piližota to operate organically.
The 2016 was aged in neutral Slovenian oak for 6 months, allowing it to integrate without overpowering its fruit-forward character. This is a red that can be served at cellar temperature or slightly chilled.
