Delivered Thanksgiving week (Sun 11/22 or Mon 11/23)

Parsnips benefit from overwinter under extreme frosts.  The piercing cold concentrates their sweetness many times over.  Come spring, they are a welcome friend in an otherwise spare season, yielding dense, nutty flesh with candy-like sugar.  Be sure to cut out the woody core.  It will remain tough when cooked.
