This yuzu-infused nigori-style sake is a very special bottle indeed. As a nigori, or "cloudy," bottling, it retains some of the residual rice lees from fermentation. These add a subtle, sweet, almost creamy profile on the palate. It's then infused with 100% Japanese yuzu fruit, which lends it a haunting, almost piney aroma. A beautiful addition to the bar, and elegant enough to stand alone in the glass.
This sake is unpasteurized and unsulfured. Please store your unopened bottled in the refrigerator to ensure its freshness.

About Niizawa Brewery
Established in the sixth year of Meiji, 1873, Niizawa has been brewing Atagonomatsu since their founding. The current president, fifth-generation Iwao Niizawa, became Miyagi Prefecture's youngest brewmaster in 2000 and created the Hakurakusei brand in 2001. In a time where there were only words in the Japanese lexicon for a pre-meal or post-meal drink, Niizawa, through Hakurakusei, pioneered the idea that there should also be a food-pairing sake (shokuchushu in Japanese). Niizawa's current brewmaster is Nanami Watanabe (22 years old at the time of this writing). She is the youngest female head sake brewer in Japan. In addition to excelling at their craft, Niizawa is deeply dedicated to sustainability. They're fully committed to the UN “2030 Agenda for Sustainable Development:" a set of international development goals that promises a more sustainable and better world by 2030. It includes 17 goals, 169 targets, and a pledge to “leave no one behind” on the planet.
