Piquette is a French wine term that refers to a wine made by fermenting the residual grape pomace from juice pressing.  By adding a little water, the residual sugars in the pomace are converted into a low alcohol, rustic beverage.  Sometimes sparkling, sometimes still, piquette was once considered a drink for peasants and farmers.  Today, it's making a resurgence as a session-style wine.

Limited Addition's piquette is made from the skins of cabernet franc and mencia, with the addition of Coast Range spring water. This is a still piquette, bone dry and made to be chilled.  Thanks to the action of native yeasts and bacteria, the flavor profile is deep and nuanced, striking somewhere between sour beer, orange wine, and kombucha.
