Retsina is a Greek tradition over 2,000-years in the making.  Before the widespread use of barrels in winemaking, Greek winemakers would seal their amphorae and bottled wine with Aleppo pine resin.  This protected the wine from oxygen, preventing spoilage.  The use of resin in winemaking gradually fell out of favor, but for many, the unique flavor of resonated wine remained a beloved novelty.  Intentionally resonated wine is common in Greece today, with a devoted following internationally. 

Retsina's unique flavor profile often shows both elements of its base grape as well as the resin itself.  In this case, the Roditis grape brings plenty of citrus and minerality, while the resin brings elements of pine, thyme, and ginger.
