In 1999, Isabelle Carles & Franck Pascal fled their urban lifestyle, trading the office for the vineyard. The came to Jonc Blanc with a vision for creating wines as naturally as possible and with the intent of capturing terroir beyond the limits of varietal typicity. Their vineyards are Biodynamically cultivated, and many of their wines receive no SO2 whatsoever. In their pursuit of authenticity, they have become an outspoken critic of established expectations in the flavor profile of an appellation. Firm believers in the unique voice of microclimates, Isabelle and Franck have taken it upon themselves to show just how diverse an otherwise well-known appellation can be.
Their "Fleur" is a delicate blend of Sauvignon Blanc, Sauvignon Gris, and Sémillon. Both traditional in its composition and yet creative for its inclusion of Sauvignon Gris, they take an established norm and transform it into something both familiar and unique.
