The 2023 vintage is 86% Baga and 14% Bical, both from from Bairrada, thus the name "3B".
Metodo traditional, otherwise understood as traditional method or méthode champenoise, refers to the second, carbonating fermentation happening inside the bottle, and is one of the original means of imparting controlled carbonation to sparkling wine.
A chalky vineyard soil base lends this harvest balanced, saline minerality, mellowed by 9 months of aging sur-lie. With no dosage added, this is a searingly crisp, assertive bottling with powerful, broad acidity. Look for strawberries, pomegranate, and a hint of anise on the palate.
About Filipa Pato
About Filipa Pato
Filipa Pato and William Wouters are a magical wife and husband collaboration. Their philosophy is simple: create authentic wines without makeup, expressing the true nature of the vineyards from which they come. Filipa graduated from the University of Coimbra, going on work first as a chemical engineer. She learned to love wine while working harvests in Bordeaux, Mendoza, and Margaret River, as well as alongside her father, the "Baga Rebel." William is a trained chef, sommelier, and restaurateur from Antwerp, Belgium. Following Filipa's passion and skill, they let their vintages speak to their deep love of Portuguese wine and culture. Filipa and William focus on indigenous grapes only: Baga, Bical, Arinto, Cercial, and Maria Gomes. Everything is grown according to biodynamic principles, as sustainably as possible. In the winery, they take a minimal intervention approach, with as little manipulation of their wines as possible. Everything is a reflection of the season, unamended and uninhibited.
