What happens when you set out to make a sparkling wine, but the project falls flat...literally? That's what happened when CWC tried to make bubbles from pinot gris and pinot blanc. Sometimes things don't work out like we expect them to. In this case, the results were better than the vision: a still wine with plenty of character and verve, all the better for failing than succeeding.
