Chorizo is a type of sausage with origins in the Iberian Peninsula (now Spain and Portugal). Similar recipes are found throughout Latin America, where its rich heat and spicy intensity complement many regional cuisines. This particular chorizo is not cured, and will need to be cooked. Excellent with shrimp and grits!
The Whole Ox
The Whole Ox is a small, sustainable butchery located in Marshall, Virginia. Run by husband and wife team Derek and Amanda Luhowiak, they are a bastion of sustainable gourmet food and wine in what is otherwise nearly a rural food desert. Derek leads the recipe development and production of their sausages and cured meats, while Amanda handles the daily operation of the shop. Artemisia's own Andrew spent many years at TWOX acting as general manager and sommelier. It was there that he gained his vast knowledge of wine, as well as his deep love for local food.
