Capitoline dry vermouth is made by hand in small batches through aromatizing a blended white wine base with 13 botanicals. The wine is then fortified with red winter wheat spirit produced in Washington D.C. by their friends and neighbors, New Columbia Distillers. A critical aspect of each of their vermouths, the base wine is carefully blended with intention and balance to better accent the botanicals of the finished product.
Their dry vermouth is a striking and modern blend of gentian, artichoke, citrus, rhubarb root, quinine, and ginger. It carries the finesse of the old world while moving with lean, sharp momentum.
