Budimir is dedicated to sustainability in both the vineyard and the winery. They are functionally organic, and much of their production is given to native grape varietals well suited to their climate. Of note, the varietal Prokupac features in their 2018 Pro Cou Patz.
Prokupac is s a red wine grape variety indigenous to the former Yugoslavia. Today, the variety is found in large quantities in Serbia, Kosovo, and North Macedonia, although it remains largely unknown outside of these countries. Prokupac has the ability to withstand temperatures of down to -18° celsius (0.4°F), and develops thick, disease-resistant skin. Its naturally high sugar content leads it to excel as both a primary wine grape and blending grape in internationally-styled blends.
In the words of the winemaker: "Wine is like a human, living and growing, developing to its peak. After, soon or later, it starts to get older loosing its energy and power. Wine has to be understood and loved, just like a human being.”
