Black Futsu squash (a relative of the butternut) is an early-ripening winter heirloom variety believed to have been cultivated since the 17th century in Japan. It's renowned across Asia and Southeast Asia, consumed raw and cooked, and gaining notoriety worldwide.
A favorite for us, Black Futsu is especially valued for its edible, thin skin; sweet, nutty flavor; and unique feature of color-changing flesh. It's also popular for decorating during the fall and winter.
