Mastiha takes its name from the sap, or "tears" of the mastic tree, an evergreen shrub native to the north-eastern Aegean Greek island of Chios.
Collected for thousands of years, mastiha has been used medicinally, cosmetically, and culinarily for thousands of years. Upon receiving a guest, it is a regional tradition to gift a glass of cold water alongside a spoonful of a taffy-like confection flavored with the sap that would harden like a lollipop when swirled into the chilled beverage.
In taking the name Mastiha, Katerina extends welcome and warmth to those with whom she shares her recipes. Mastiha pita is a coming together with friends and family over life's essential simplicities.
