In the words of Empordàlia, "Sinols is a union of feelings in an attempt to make art with the grapes of this privileged place. Our wish is to convey to those who try it not only sensations that are pleasing to the senses, but also the spirit and strength of the elements of this land."

Empordàlia's Sinols is a solera-style dessert wine made from overripe, very old grapes (upwards of 50 years). A slow maceration upon harvest prompts spontaneous fermentation, after which the must is aged in solera, allowing it to slowly oxidize.  

The must, in this case, is made from a relative of Garnatxa, or Grenache, called Garnatxa Gris.  A paler, more floral cousin to the more familiar red variety, it lends itself well to extended oxygen contact and residual sweetness. 

Use as a definitive backdrop in a cocktail, or pair on its own with cheeses, dried fruit, chocolate, and nuts. 

About Empordàlia

Located in Catalonia, Spain, Empordàlia is dedicated to preserving traditional local grape varieties and old-world fermentation methods. They craft a wide array of still, sparkling, and dessert wines, as well as olive oil. They also sell locally-made foodstuffs from nearby small producers, such as tinned fish and honey. In addition to winegrowing, Empordàlia offers an incredible wine tourism experience, including winery stays, horseback vineyard rides, and even boat tours of the local region. Their goal is to reunite the experience of wine with an understanding of its surrounding terroir through direct experience. Showcasing a sense of place and proximity is as much a part of the Empordàlia vision as the wines themselves. Everything is in service of preserving a living sense of Catalonia's landscape, and the people within it.
