Macedonian wine was traditionally mixed with honey to aid in its preservation and then stored in buried amphorae. A thin layer of olive oil was poured overtop the wine, protecting it from the damaging effects of oxygen. Dry wine would not make an appearance in Macedonia until much later, when the use of sulfur traveled from France to the farms and holdings of the Macedonian countryside.
